oh yeah, forgot about temperature of meat at prep. it needs to be at room temperature or slightly cooler when out of fridge for a while.

A drizzle of salt and pepper is all dat goes onto mah steak! Beef tastes great as it is. Unlike pork, where a little more personal input is necessary.

Thanks for the tips on the heat.:)

I was taught to age the beef at 4 degrees C and that the fat in the meat helps with the aging. Then hang the meat for drying for a day.

I just apply butter when I grill.

a chef i know buys freshly butchered racks and age them in a refrigerated room she has in her house. i don't have such a room so i buy racks that are aged by the butcher shop. .

It's more of a corporate creation than a mom/pop restaurant going global.

Tony romas absolutely suck leh.. It's like a more expensive sizzlers. For good steak on a budget I've been going to Aston's.. There's one of their former stalls in Serangoon gardens (now called isteak or something) that used to be quite decent below $20. Last time I ate there was 6 months ago. Hope they're still good at what they do.

I also recall Brewerkz at Boat quay serving up a decent grilled steak.

When I was in Jkt I noticed that franchising restaurants is a popular means of investing. Many Sporeans also want to do the same thing unfortunately the big guys have monopolised the opportunities :(

Was told that a MacDonald franchise in Spore costs over a million :eek:
