How to maintain Fitness as a mid 40 male?

Try to eat 3-4 hrs before we sleep
8 hours of that 14 hours is sleeping so if you eat 3 hours before bedtime and delay your morning meal by 3 hours thats 3+8+3 = 14 hours which surely is quite manageable.

I do 3+8+5 =16 hours so I have my breakfast/lunch around 11 am in the morning.

Once you get used to the routine it's pretty easy.
 
Prolonged fasting. 48, 72 or 96 hours.

There is no other way.

The greatest lunacy of our times is eating so much more food that we can digest, and believing that three meals a day is mandatory.

I do that every few months.... 72 hours. water and bone broth only.
