Nasi goreng is still better than Chinese fried rice. My personal opinion.

1st chef's fried rice will taste dry and a bit hard.
2nd chef's fried rice will taste smooth and a bit soft.

both of them cook the egg first..then when the egg is half cooked, they throw in the rice, follow by salt, pepper and other seasoning, finally the spring onion.. This seems to be the correct procedure.

Another method is to do an "omelette fried rice".

Authentic chink fried rice should be 金包银.....
Test of chef's skill is to coat every single grain of rice with egg.
Beaten egg added after rice.

Just put 10 eggs.. Confirm all rice inside the egg.
