Cook Chinese Egg Fried Rice

method one is only possible for restaurant. With massively powerful commerical cooker and massive commerical wok.
If you do method 1 with home cooker and normal wok, the egg will stick to the rice and turn into a mess.

Test of chef's skill is to coat every single grain of rice with egg.

why do you say that? It's cos of the ingredients used nothing to do with cooking skill.

fried lice has more to do with the condition and quality of cooked lice, wok hei, and skill of cook. some fry rice first in wok before adding egg while some fry egg first before adding rice. i prefer the former. in the former, the egg is mixed well with rice while the latter the egg comes in lumps. a variation of the former technique involves beating the egg away from wok before mixing with rice in the wok. this way, the beaten egg coats the rice grains while the mixture is quickly fried. you can try it at home. it's easy peesy, but you need a good fire and wok.

add one clove of garlic (smashed) to the rice to add as flavor.

Preparation:

1. break 1 or 2 eggs in a bowl and beat the egg.

Step:

1 add oil to pan and heat it.

2. throw garlic into pan and followed by rice.

3. Stir fry rice and add a bit of water to it.

4. Move rice aside to corner to form like a ring in the center.

5. Pour beaten egg onto the middle and let it stir fry a little.

6. Cover rice over the eggs and keep stir fry till cook.

Fried rice should look glossy (by adding water to it in step 3).

Add soy sauce or Indonesian Kechap manis (sweet) to taste.

Add paper to for taste.

Option: add tomato kechap to it guarantee children will love it, never fail.




both of them cook the egg first..then when the egg is half cooked, they throw in the rice, follow by salt, pepper and other seasoning, finally the spring onion.. This seems to be the correct procedure.
