there’s no right or wong way. but there’s the kl way. better than jb version. in sg, i only know 1 hawker who does it with less oil and way crispier starch and eggs.
 
this jb way has too much oil, starch, and omelette turns out too soggy, slimy, and greasy.
 
penang version has the right amount of starch but a little too much oil and too few eggs. not as crispy as the kl version.
 
this sinkie version is 6.9 out of 9. pretty good but a tad more greasy than the kl version. but better than the jb and penang versions.
 
i tied at home once, did not turn out well.
I think must use potato starch not corn flour.

iron pan must be very well seasoned. i have a large iron pan for paella. it’s so well seasoned paella lice don’t stick to it. i get crusty lice at the bottom which is perfect. will try it with both cast iron skillet and paella pan and see if i can achieve crusty and crunchy omelette.
