Why are the schools teaching China History?

There's nothing to be ashamed or feel genetically inferior about that. The British granted their visas to Singapore and Malaya due to need of labour to open up ports, plantations and mines. Most our ancestors chose to leave China then because of life-threatening situations. Most of them worked hard here and the British paid them their fair dues. Many of them went from coolies to towkays. Now, what's wrong with that? What's there to be ashamed or feel inferior about?

During those chaotic days in China, many Chinese came over for the lavish paychecks which the Brits could issue out. So, they became the Pinoy labourer and the Pinay maid in Singapore. Especially, the Hainanese when they worked as men-servants or cook. That's how they got their skill from making ang moh pastry and bakery. Curry rice ? Coffee ?

nothing, just very funny to build a country full of coolies, now the descendant from low class of china, to high class in SEA, looking down on low class people of china. yet they never thank PAP or Brits that bring them the wealth and education to look down on their motherland.
 
SG history is crap except for the part about how LKY survived WW2, fought for SG's independence and built SG into a first-world country.

Singapore's history is basically the biography of LKY and Familee.

Why Hock Chew one ? I think sometimes Hainanese ones also not bad lah. You don't get 100% Quality Controlled type - on and off. Depending on the 'tow chew', the one who prepares the coffee.

Traditionally, most local Chinese coffeeshops in Singapore were owned by Hainanese because they had more capital and escaped with their capital intact before war reached Hainan. Many of them started out here as small business owners already in early colonial days. However, they hired Hockchew coffee bean roasters who started out here as servants to the colonists, making and serving coffee and tea for their breakfast and teatime, where they learned their trade.

The traditional Hockchew way of roasting and grounding coffee bean was fresh just behind the the coffeeshop rear gate. It was butter roasted and the grounding roller was hand operated. The coffee should be served black without milk or cream but still tasting with the creamy texture, more fragrant and delicious, unlike most coffee nowadays that taking it black means an acidic aftertaste, but adding too much sugar, milk or cream is bad on your weight.

A country needs to have certain sizeable area and population to call itself an empire. The British, being diplomatically humble or prone to understatement, refused to call themselves an empire, just a kingdom with oversea colonies as even though Canada and Australia are vast enough in area, they were sparsely populated at that time. It was the subordination of India that the British decided to officially call themselves the British Empire because India by itself was already empire-sized.

I see. That's interesting. Hock Chia went into trishaw or rickshaw initially. After that, they upgraded their trade into buses or similar trade too. I heard that some Hock Chia also joined coffee shop group.

Yeah, Hockchias were dominant in public transport businesses, from rickshaw to trishaw to bus and taxi. The better capitalised Hockchias were also dominant in gambling dens and daily Chinese lottery a.k.a. zhap jee kee bankers.
