Hawker School– Yet Another Stupid Idea From Vivian B

char , my mother is a hawker . for your infor , alot of famous hawkers are all self-taught . my mother also teach me how to cook . if you are willing to learn , im sure theres many ways for you to learn ...instead of going school .

I know a lot of hawkers are self taught like I said, nothing stopping them from starting if they want to but instead of making those pple run all around the place to look for a way to get started, wouldn't starting a school help eliminate the biggest obstacle to begin with. If someone have the skills, NOTHING is stopping them from starting up, the problem is acquiring the skill is a very big problem right now. We would all like to see the protege self taught chef starting his own stall and making good, but it isn't happening. And I just want to point out, U see pple here complaining about food quality going downhill, did anyone bother to ask WHY?????

Foreigners cooking local food almost always fall into 2 cat. The first is under a franchise so they just heat up whatever comes their way. The 2nd is they get all their sauces and ingredients from Suppliers that's why the food is so half ass coz they just heat up the stuff. From my observation, an increasing number of stalls that are owned by locals are also going down that road. Even some of the famous stalls are getting their sauce/soup ingredients from suppliers although some of them at least bother to modify it to taste better. The situation is only going to get worse from here which is why I support a institution to teach the next gen of chefs. Get some of the current gen of famous cooks who are retiring or retired to come in as consultants or trainers. Get the next batch started before its too late

let me tell you char , many factors make the quality of food drop !!!

1) the hawker himself is lazy and want to take short cut
2) ingredients and rental goes up , so those hawkers want to cut cost and save on ingredients
3) when you cook everyday for few years ...im sure sometimes the quality of food will drop because you become less devoted to your cooking

actucally cooking is easy ..if you know the basic skill . and basic skill is easy to learn from anywhere through grandfather , grandmother , parents , internet , books , friends ....ect . cooking is about creative ...which you will never learn in school .
 
Maybe our profit driven estabLishment is spurred on by the fact that some seLf-taught sercret receipes' is caLLing for 2 miLs now ?..;)

My alternative solution is a personalised one.
Identify which are the hawkers worthy of having their wares passed on and discuss with them what they need to pass it on.
Are their children or relatives interested, do they want to hire apprentices, what can be done to help them pass it on and
keep up the quality? Enhance hawker centres cleanliness but stop moving and refurbishing.
All these foodcourts, refurbished hawker centres and coffee shops are just more elite rent generating money grabbing schemes.
No sincerity at all.

Incidentally, this personalised suggestion is similar to my suggestion to help the poor, needy and most importantly, worthy in SG.
All those unworthy can go fly a kite.
Where to get resources for these 2 projects? Well, there are at least 2 ministars who are under-utilised, and plenty of civil servants and
unifomed personnal.

Point is one of the main factors. And passion must be there. ;)
