FYI, modern phones are a collection of CPUs and operating systems. What you are talking about is on the user-facing application side. The baseband processor that handles the network and comms side is typically completely inaccessible to you, and runs its own OS and apps. If the baseband is compromised, nothing you do on the user side will protect you since the baseband system has access to everything. If the CCP was going to plant on a phone for tracking or monitoring, they would just do it on the baseband side.
