If a witness brought forth a story of the prophet, his character would also be in inspection. If he doesn't pray, fast or give zakat, lies etc. No one will believe him and his story will never reach those compiler or hadiths. Ditto for the next person and so on and so on...until it reaches compilers like Muslim etc.

Zakat, the mosque would be able check by record and book keeping in modern days. You don't even have evidence, they kept and maintaince such records in ancient times. They memorize whole Qurans. They transfer hadiths word for word.
That is why it is found many times hadiths from different transmissions ending up in diverse geographical location are almost exactly alike.

Not just arabs, many races have similar traditions of passing down folk songs and short stories through reciting as not every one is literate.

But you can pick any random page, fire off a verse and tell them to continue. But to do that you must be able to read the Quran in the first place.
