Hawker food quality tends to deteriorate due to two reasons:
1) New management/cook, including replacement by owner's children..
2) After the hawker centre's renovation (which might also be accompanied by a price hike, quantity reduction).
The worst is when both #1 and #2 happen at the same time... I have witnessed some examples.![]()
3) Change owners/chefs but retain singboard/name/awards.
