Any good ways to do fried rice??

usually eggs have life.
however nowadays, commercial eggs from chicken farms have no life.

how to check if eggs have life?
that is easy, try to use torch light and see!

kampung eggs or free range eggs (if hen and chicken are living together) have life.

Do you guys recommend using salt as one of the ingredient for cooking fried rice?

No. Unsalted food is not only much healthier (salty food causes high blood pressure and heart attacks), it actually tastes better, as you can finally enjoy the original flavours of the ingredients (many of which are already sufficiently salty themselves).

Next time you go to Macdonalds, ask for unsalted fries. You'll find it tastes better than salted fries, not to mention it's healthier.

side track a little.
is expensive salt is more healthier than cheap sea salt?

I will fry the rice and eggs and when almost finish and while fire is still very hot I will push the rice to the side creating like an open space in the middle then pour soya sauce into this space which will create loud woosh noise then quickly cover the rice over it and stir fry a little more. This will give a little saltiness into the dish while at the same time make it smells really "pang" as some of the soya sauce would be burned up.

ok, i will try that tomorrow..

Nobody mentioned the most important factor and that is that the rice has to be cooked the day before it is fried.

Add some crab meat and can sell for $25 per plate. ;)

to have good fried rice, most importantly u shall use overnight rice from the fridge.
as the rice would be dry and not soggy

refrigerated rice has moisture content reduced n somehow it makes fried lice tastier... provided you know how to stir fry n add suitable ingredients. I hve eaten Chen sisters' fried lice n it is out of the world with generous meat from m&d crabs as topping. In Bukit Pasoh days I used to see EDB chairman .... Tay Cheng Wan eating there during lunch time........... din know their lunch hour so long as waiting time there is about an hour.

Can add points........ not chillie red or green

Used leftover chicken to cook chicken rice,
then use the leftover chicken rice to make fried rice,
then use the leftover fried rice to make porridge,
then use the leftover porridge to fry again,
taste funny liao, but can still eat with good soya sauce, done & no wastage.

Put rice wine when cooking fried rice for that extra tasty flavor..
