It's VERY important to have enough PROTEIN in one's DAILY diet.Should one stick to fresh vegetables, like salads for a really healthy meal?
When I'm in a VEGAN mood, I would cook soup with ONLY soya beans and shiitake mushrooms, and add some salt and pepper.
That's all, but it's VERY healthy and high in protein and other nutrients:
