Me think the service charge needs to b clearly defined. The restaurant charge 10%. Is it given directly to the wait staff or used as profits? If used as profits....abolishing it n raising port prices would b more efficient. However I think such practice remains due to making it easy to scam customers. Cause customers have the mindset that have to pay 10% more. However if no service charge n the bill goes up by 10%. The increase is harder to hide. So 10% is like a reserve profit...easy to get n custs won't complain (as much)

depends on towkays and or management. some honor it while others abuse it. for example, in many chink and neh/paki eateries in sf, chink and neh/paki bosses keep all the tips and surcharges like service or city imposed fair wage fees to themselves if these are paid electronically via credit cards and cashless apps. this abuse is possible as bosses manage all electronic payments in the back office. same in prc too. that’s why some regular customers who sympathize with service staff pay tips with cash directly and separately to the service staff instead of adding to the bill. some gongcheebye customers add cash tips to bills in payment folders and the unscrupulous towkays quickly grab them and seize the cash. some towkays even keep the cash in the tip jar all to themselves. it’s the 6.9k years of selfish, greedy, and cheating culture of chinks and nehs/pakis. can eat and cheat don’t waste. i don’t encounter this problem with latino and angmoh joints.
