Japanese Food - Fine But Boring?

Japanese food has been the rage throughout the world since the last world war, well at least in countries which could afford the prices. However, it's quite restricted and structuralized. Beside the addition of some Chinese-influenced stir-fried dishes, Indian-influenced curry dishes and western-influenced kastu (fried cutlet) dishes, what else?

Sushi, sashimi and zaru soba (sum up the raw fish and cold dishes available).
Udon, ramen and soba (sum up the noodle varieties available).
Shoyu, shio and miso (sum up the soup bases available).
Teriyaki, teppanyaki and sukiyaki (sum up the meat cooking styles available).

Discovered a very good Japanese restaurant this trip back Sumiya in Suntec

Certainly fine and not boring, have to admit this is reasonably priced

Yakitori minced chicken dip with half boiled egg (raw egg will actually tastier)
