Do away with the toastings, your ribs couLd have been toughened by this.Guessed what you need is to tenderise the meat prior to BBQing them; just sueeze the juices of any citrus fruits over them wiLL do.However you
have to Let them work in for at Least 1 hour before the bbq process..

Read somewhere honey is a secret ingredient to good BBQ pork ribs and chicken wings especially over charcoal. Any bros/sis got any tips to share?

Fishy, gam sia, gam sia. this is my favorite dish. I use to cook over charcoal with chicken, salted fish, chye sim and chinese sausage ( goon chiang in Thai). Even my neighbor say tok kong. Did you use plain water or some seasoning for the rice?

Gin, here's my version. I used a little chicken stock to cook the rice. I have a small charcoal stove. the rice is cook from raw till cooked. The vegetables, giam her, chicken, sausage is added halfway. Finish with dark soya sauce. Think i will do it one of these days but need to get some charcoal first. :smile:

Wow so serious foodie, must use charcoal to cook somemore! I see you bother to cut red chillies too. In Msia eateries, very hard to find red chillies, mostly use green chillies.

Hows the weather in Bangkok today? Im flying in for one night today, Joety where to get the best Tom yam?(Street)

At this time the weather is cool but clear. Clear means its gonna be hot later.

Actually tom-yam is not my favourite as I prefer tom-saeb however for good street tom-yam that I have frequently will be along Huay Kwang night market I have tried many there and goes there at least once a week I have to say the tom-yam there from most store will not go wrong.

Where you putting up in Bkk? Hell I'm leaving for Surin soon for a night if not could host you and bring you to my favourite seafood Nathong. Next time ok?

I will be at Inter-Con, Just for a night before flying out.
We can def. meet since I will be going there at least once a month for the next few months, but it will all be for 1 night only.

I'm afraid I am not familiar with street hawker around Inter-Con area. Huay Kwang is not far if the taxi driver don't cheat you however if you're staying in Inter-Con I believe the taxis there will not dare play punk. Huay Kwang night market is where the good food are and if you're a late night guy around 11pm onwards many pretty girls there after their work. Huay Kwang is also located along the famous Ratchada Road.

Wow so serious foodie, must use charcoal to cook somemore! I see you bother to cut red chillies too. In Msia eateries, very hard to find red chillies, mostly use green chillies.
For claypot, seems that charcoal is better than any other type of stove. Only problem is the cleaning. Red chillies are plentiful in LOS. The stalls usually have cutted red and green chillies in fish sauce as a standard. Myself prefer light soya sauce.
