Another reason is that the trays are usually filthy, because they are not washed with soap and water, but merely wiped with a cloth possibly used to wipe the table. And sometimes we assume that the trays are "as clean" as the plates and bowls.![]()

the sg breakfast, lunch and dinner system is amazing, and it works! no matter how much detractors of the gov try to pin the blame or any blame on eatery habits and issues on the gov, they ring hollow. and that's simply because the sg system works, and millions of workers are done with their delicious, fulfilling and varied lunches by 1pm and back to work on time. all these distractions and sidestepping on tray returns, contractors profiting, and cleaners not earning enough are simply missing the mountain. the cleaners are more relieved now and can concentrate more on clearing the trays and cleaning the dishes when slowly but surely sinkie gluttons chip in to help clear their own mess.![]()
Porcelain is a lousy heat insulator. Too hot for my smooth hands to hold. Maybe earthen ware or clay? Eat already just smash it to become compost/landfill.
No. It's not sustainable feeding a big population within a short operating period.. while keeping one eye on quality and the other on costs. The cracks of this logistics model are appearing. If you have lived here in the last 8 years you would have noticed the decline of food standards. Give it another 8 years and we'll all be eating fast food for lunch. No joke.
The real working system is the Mumbai lunch tiffinwala. It's labour intensive as hell but it solves a very complex logistics issue. This is one area the ah nehs excel at.

Trays are for leftovers and rubbish like used tissues and bits and pieces. So that the table will not be so dirty and the next patron could use it immediately without waiting for the cleaning lady to wipe the dirty and yucky table.
