chinese food in my area has to be good to stay around. it's a very competitive business with different tastes and demands: prc, taiwanese, hongkies, viet chinese, thai chinese, etc. even among prc chinese, there's dongbei vs. hunan vs. shanghai vs. sichuan vs. guangzhou vs. halal vs. mongolian. lousy ones don't survive a year. they have to be authentic and nostalgic to draw the regulars and hardcore, which number in the hundreds of thousands.

simple light version :p:p:p

overnight rice (kept in fridge), small onions, mixed peas, corn and carrots, eggs, chicken frank (Valley Chef brand)

chop small onions into small bits, stir fry till brown
peas, corn, carrots in, diced chicken franks in
push the fried items slightly aside, fry the egg
stir fry the whole mixture, add rice, heat max
sear the rice at the bottom, add some salt to draw the moisture out from the ingredients
a bit of black pepper, chopped spring onion, and ready to serve :p:p:p

The amount of moisture in the rice is key (lesser the better).
I think even the best chefs would find it hard to whip up a good fried rice dish using fresh rice.
 
One rice form, 2 advantages..from the baLances' after dinner; to fried rice the day after.;)
Using caLrose rice is another nobLe option which i have experimeted, but faiLed miserabLy with basmati
rice somehow..:cool:
 
your fried rice looks good, bro. But my personal favourite is sambal fried rice.

This seems to be a kiLLer dish Laced with MSG !..probabLy you need to down 1 Litre of water after that.:)
