From everything I’ve heard, their death is painless and they’re not conscious. My information comes primarily from Dr. Temple Grandin, who is an animal behaviorist who has spent her entire career working with slaughterhouses to make the deaths pain-free and stress free. This is a sensitive topic—vegans want to play up how cruel slaughterhouses are, while cattle ranchers want to play up how humane they are. Here’s why I believe, in this case, that cattle slaughter in the US is not painful, even though I’m sure slaughterhouses look horrifically awful. (I’m sympathetic to the argument that everyone should be vegetarian or vegan—because the lives of these animals on factory farms are unbearably sad and they suffer a lot there for the short time they are alive). Anyway, the reason why I think the animals don’t suffer in the slaughterhouse is:
When cows are stressed, they release some stress hormones like adrenaline. This causes the meat to have a bit of a not good taste, so slaughterhouses are eager to prevent that from happening. So they work hard to prevent it—not because they’re truly concerned about the suffering of animals (though some are), but because it affects their bottom line. Since it affects the flavor of the meat if the animal suffers, we would know if they were lying.
So here’s what they do: they try to make the trip to the slaughterhouse and the wait for slaughter as peaceful and non-scary as possible. They have this squeeze chute that is calming, and they prevent scary, unfamiliar noises or anything else that would alarm the animal to its fate. Then, the cow abruptly gets a stunning bolt to the head, which renders them unconscious or dead, and definitely not able to detect any pain, so they won’t get scared and release adrenaline. So they don’t know about or feel anything that happens afterwards—the lifting, the bleeding out. Nothing.

Incidentally, there is a lot of controversy now in Europe about slaughter methods. These methods now used are the most humane we have ever had. Meanwhile, kosher and halal methods of slaughter were devised to be the most humane possible thousands of years ago. They involve a quick slit to the throat so they bleed out. But there’s naturally no use of the electrical stunning bolt. Unfortunately, this makes these kosher and halal methods less humane than the current methods. So it has put some animal rights activists at odds with the Jewish and Muslim communities, as well as empowering antisemites and Islamophobes to gain support for laws that harass and infringe upon the rights of Muslims and Jews.

They should go through the process of dismemberment, disembowelment and then decapitation.
