correct me if I am wrong but I think the right way to do it is to reverse slowly so that the chain becomes taut then step on the accelerator to give more power to the towing? That way the chain doesnt go slack and snap into tightness.

The jerking method he was doing was putting more stress on the chain links rather than moving the bus.
