Why don't they launch three subs concurrently at the same time? So if one fails, there are two as backups.

No, all subs are filled with passengers, in case something happens to one sub that sub's passengers get transferred to the other two subs and they abort the expedition, going back up to the surface.

I thought sub attached to mother ship at the surface by cables. So instead of one, use two cables to pull sub up for safety.
