So, the hadiths merely took the info from scientific and medical sources when it became available (i.e., 360 joints in the human body) and then attributed it to the prophet? It's part of the collection called the Hadiths. It's witness accounts of words and actions observed and passed down through generations and eventually compiled into volumes.
It's veracity is called Sciences of the Hadiths. A methodology of ascertaining its authenticity.
One good example would be two different chains of Hadith transmission but with almost exactly the same words quoted and attributed to the prophet. The various people in those chains of transmission too, are investigated for their integrity, chronology and biography.
There are many other criteria but this particular Hadith has been ascertained by many investigators to be authentic.
I personally have no time to do the checking but scholars will check and audit each other's works.
Even christian scholars are welcomed to check on the authenticity of it and present their evidence if they find any contradiction.
I just ask God for guidance. It's a lot simpler. I don't need any book or priest.
