Herbal Chicken Soup recipe

1 pack of herbal chicken herbs available in supermarket
(Look for these important herbs: Huaishan, BeiQi, DangShen, YuZhu, Wolfberries and Danggui)
2 slices of thumb size Danggui (optional)
50g of dried longan or 6-8 red dates (optional)

1 whole chicken, skinned / or 1 drumstick (skinned), 3 wings
200g lean meat

16 cups of water (enough for 4 x 2 meals)
2 teaspoon of salt, maybe more
30 gram of rock sugar (about 1 lychee size)
Dashes of Huatiao wine

Directions
1) Blanch the herbs with hot water (to get rid bitterness and dirty particles)
2) Boil the water, put in the herbs and the meats, slow cook for 90 minutes
3) After 90 mins, add salt to taste, rock sugar and dried longans/dates, slow cook for another 45 mins

When serving, add a few dash of huatioa wine

Note
My version is diluted version, more suitable for family to drink since its not so herby. If you want to have a stronger taste herbal chicken soup, then use half the amount of water, and salt.

If the soup is not what you expected, add salt, it will taste better...

same same here AK.....except for us its less water and no rock sugar. We use corn and the dried longan instead.

Hi AK,

I see you listed Danggui as an optional item ... any particular reason why.

From what I understand, Danggui is more for women to revitalize their blood system after menstruation.
Although men use it as a muscle building blood tonic ... too much of it can have side-effect on the little guy down under. True ???
 
Danggui should not be optional. It really makes it taste better and the after-feeling is good.
 
Look tasty. Now food center/hawker flooded with new soup shop. No taste very low quality.

Dont like oil. Peel of the skin and clean the fat before cock the chicken. That what I do.
 
if u get those packed herb in the supermarket, there are danggui inside already, my additional tanggui is optional if you like danggui.

Not sure about danggui bad for men, and yes, I prefer herby soup lesser oil.....

If there's no fat it won't be savory

i'm ok with breast or thigh skin. it's thinner and still contributes chicken oil flavor. wing skin reminds me of hormone injections and toxin accumulation. i may be wrong, but it's a mental thing. bones are definitely important.
