#1 - Extra Virgin Olive Oil is the healthiest oil to use.

A remarkably effortless way to significantly improve your health : replace all your cooking oils with extra virgin olive oil, and use only extra virgin olive oil for all your cooking needs. The only precaution when using extra virgin olive oil for cooking (eg. stir frying), is that you must keep the frying temperature below the smoke point of olive oil. This is easy to do : as soon as you see lots of smoke coming from your frying pan, lower the heat until the smoke is eliminated. From personal cooking experience, almost all foods can be stir fried below the smoke point temperature of extra virgin olive oil. Cooking just takes a little bit longer on lower heat, not a problem. If you wish to occasionally indulge in deep fried foods, either use another cooking oil with a higher smoke point, or buy it from an eatery outside (eg. French fries from Macs) instead of deep frying it yourself, if you only have extra virgin olive oil at home.

#2 - Always use lots of Garlic, Ginger and Onions in all your stir fries with olive oil in every meal.

#3 - It is perfectly healthy to eat eggs. Unless you have diabetes, you should eat 2 eggs a day. Latest research shows that eating 2 eggs a day not only doesn't increase your risk of cardiovascular disease, it actually improves both your HDL : LDL as well as your large LDL : small LDL ratios.

Omega 3 enriched eggs are the best eggs to consume, since everyone's dietary ratio of Omega 6 : 3 is terribly skewed towards Omega 6, causing a variety of health problems, when the correct ratio for optimum health is 1 : 1.

i’m now using avocado oil for cooking. extra virgin olive oil (evoo) when cold pressed is great for dripping and adding to salad dressing but not good for the pan or pot over heat. i used to have both evoo on the shelf for dressing or adding to pasta before serving and light olive oil (loo) for cooking. loo as it evokes fond memories of my time in the loo is better for cooking than evoo which evokes fantasies of sextra virgins. now as a universal do-it-all oil, i find avocado oil just as healthy and very versatile. evoo still stays in shelf for dressing and dripping on cooked pasta while loo is no more to be found in my kitchen. the other alternative oil is grapeseed oil, and i buy it only when avocado oil runs out (they frequently do as sillycon valleyers go hog wild with ao).

EVOO is perfectly fine for stir frying, provided you have the patience to use low heat (ie. longer cooking time) and stay below EVOO's smoke point. If you're impatient and want to use higher heat for stir frying (ie. shorter cooking time), then indeed it's a good idea to use avocado oil as you suggested.

eh... loo quite useless health wise leh... avo and grapeseed better. or of course evoo.
