Fit to screen is enlarge x (width) and y (height) pixels at at same ratio until 1 of the axis reaches the limit of your display.

Stretch is dun care about the ratio, just enlarge both axis until both reach the limit of your display.

Eg a perfectly square picture fit to a wide screen, will result in the largest square you screen can show. With empty areas on the left and right of the screen.

The same square stretched will fill your monitor entirely without any empty areas. But you'll end up with a rectangle.
