Liaoning will unlikely operate alone and will need a fleet of frigates and submarines escort to provide all round defence against threats from the Air, surface and underwater.
Chinese navy surface warship is very strong. Unlikely usn can threaten liaoning with Harpoon missile because the range is too short..any aircraft and warship would need to get dangerously close before launching. The Achilles heel of Chinese navy is still their ASW capability. Using submarine to ambush liaoning will have a better chance of scoring. And when i say ambush, i means lying low under the ocean waiting for prey.
I like the sinking in deep waters as it confuses the hell out of everyone for months if done by stealth and the US have the subs and torps to do it.

Firstly, there will be no overt attack by the US 7th Fleet on the Liaoning unless there is a declaration of war or an undeclared state of war between the 2 countries. All US Forces have to adhere to rules of engagement. The same goes for the PLN. Its not likely that a rogue US naval commander will attack the Liaoning for his own reasons. If there is already a declared state of war between the 2 countries, then the Chinese will immediately know who sank their carrier. They can elect to respond conventionally or by nuclear means. If they respond in the nuclear way, they further have to decide whether its a strategic or theatre tactical response. If is a strategic nuclear response, then it will be the end of the world as their ICBMs will rain down on the US and vice versa. If they respond with tactical nukes, they will also guarantee the US will do the same. Currently, the US's ability to deliver weapons at a long range and with great precision far surpasses the Chinese. They can try to nuke the US 7th Fleet, but the US will be able to nuke all their naval fleets at sea, as well as their naval bases and communication centres located in China. They will not win this one, as the chinese will incur far larger military and civilian casualties then the US by virtue of the larger population and its density in their country.
The only response then should be another conventional one. Again, the chinese will be at a disadvantage. The US Navy can sink the Liaoning much easier then the PLN can sink any US carrier. They have superior numbers in a land war but not at sea.
So likely the PLN and PLA will retaliate against softer US military targets. Maybe shoot up the base at Diego Garcia. Maybe board or sink US flagged cargo vessels, etc. Their propaganda will spin it as a great chinese victory if they hit US soft targets.
The best recent example will be to examine the Falkland Wars. The Argentinian heavy cruiser General Belgrano will sank by a RN Submarine which was operating in an area not in any threat to the British forces. It was sunk anyway because of the potential danger it post, not the actual danger. Some say it was unnecessary to sink it. but war is war. If you are not prepared then bad things happen to you. In this war, the UK process ICBM which they could have easily send against the Argentines. They choose not to because they did not want to be the ones with the bad world opinion.
