californians are looking forward to tasting some "sai chwee". anything with a funny name, foreign and mysterious will sell. for example, acai berry beverage is still selling well. newater can be marketed here as "new age water", and i'm sure wealthy californians including silicon valley royalty and hollywood celebs will enjoy the very subtle tinge of post-processed laksa and kopi-c in the after-taste. :p

duration: 1 hour 25 minutes.
technique: hold on to branches, feet firmly on ladder, swing thin (new) branches over within reach to get to fruit hanging at end of branches.
trimming and pruning: trim and prune your trees carefully and strategically in winter, leaving a few young branches behind. never trim and prune after buds have sprouted. abundance of flowers indicate abundance of fruit.

How much water did you use to get this quantity of fruits?

there was practically no rain and thus ground seepage water in the months of december and january. that could have destroyed any crop depending on winter rains to sprout. luckily for some fruit, such as apricots, plums, peaches, figs, nectarine, the budding period is around february. and in february, there was much needed rain, enough to raise the water table in the ground so that deep roots can find water. young trees or plants with shallow roots will have a hard time fruiting this season. they will need to be potted and watered to produce. sprinklers and drips have little effect on mature trees with ample branches and canopy to produce such a vast amount of fruit. their root networks are deep and wide, and they rely heavily on ground water several feet deep. there must be some water flowing deep in the ground in my yard, and i hope it's not subject to liquefaction during a freak prolonged storm.

in between world cup games, took some of the apricots and cooked them into jam....

8 cups of diced apricots
6 cups raw brown sugar
1/4 cup of lemon juice
can make 4 pint-size jars

4 trays can produce 16 jars....not bad for a drought year.

to cut down on sugar, the revised recipe is:
sterilize jars in boiling water, allow to cool
8 cups of diced apricot
4 cups of sugar
1/4 cup of freshly squeezed lemon juice
cook all ingredients in pot at medium heat for 40 minutes, stirring constantly
transfer contents evenly to jars
seal jars immediately when contents are still hot
after a few minutes will hear popping sounds of jar caps, they are sealed

about 6 months for the low sugar jars and 1 year for the jars with higher sugar content. if sealed well, they can last for years. made 6 more today. i'm giving away all of them save one. this year they carry a special drought year label.
