Yes old give full details so I will avoid. Such dishes without pork etc is BS

Whompoa... my take is when they are frying their base noodle batch, fry the yellow noodles a bit longer to remove the ghee taste; then use stronger heat during actual frying to obtain the wok hei aroma. Their stock not too bad, their chilli passable.
