this is why many old traditional japanese food shop refuse to franchise their business to other ppl . of course if they franchise it out , they will earn more money but if something goes wrong their 100 years reputation will go down ....
 
That is a preassure cooker. That means that they are still cooking it the good old fashion way. Now a days all those KFC deepfried their chicken would sure like to know which part of matlasia cook theirs the good old pressure cooker way thou.

There's nothing much of Japanese food variety to franchise around. It's either udon or soba, teriyaki or teppanyaki, sushi or sashimi, rice or rice. What's there to specialize and franchise?
