Traditional Indian curry Muslim or otherwise doesn't really have much or any potatoes...but i think potatoes are used in the curry firstly they are cheap and secondly they release starch which helps make the curry thicker without the need to add corn starch..lastly the potatoes soaks in the curry giving them a nice flavour
 
I prefer it with tau pok, cook until soft, soft, one bite and the juice comes out.
