The National Environment Agency says, the number of hawkers issued with Notices to Attend Court or NTACs and fined for hygiene lapses almost doubled to 730 last year.
The offenders were fined between $100 and $300 each.
The number of recalcitrant stall operators who were suspended also went up from 13 to 19 in 2008.
NEA says the increases were due to stepped up enforcements at hawker centres.
However, it noted there has been a tremendous improvement in the number of hawkers issued with written warnings.
The number plummeted from some 1,000 in 2007 to about 300 last year.
NEA also says it has stepped up its anti-rat operations in the Geylang Serai Market since Friday last week.
This, after two women died and another suffered a miscarriage after eating Indian rojak from a stall in the market.
To date, pest controllers have already caught more than 40 rats in the premises.
