Forget about plates... use the old school SAF cookhouse metal tray.
And no separate stalls, just one counter with one queue.

Yes you are so right! This is Asia where a hawker centre cleaner will look down on a road sweeper & a toilet cleaning auntie will look down on a rubbish truck driver! Basically all do not take pride in their job & give their 100% just because the pay is low! The Koreans in the lower wrung take real pride in what they do because they have a very strong workers union which Singapore also has but only for the convenience of million dollars salary dogs!
