Any idea if this dish has local origins?
Frankly never heard, seen or eaten this before up till about 20 years ago when first tried it in china.

Sidetrack...any noticed if the eggs in supermarket now are getting smaller in size?

6. Heat up a wok with adequate oiL.
7. Dunk in the chopped tomatoes and LightLy stir fry them tiLL more moisture contents are removed.
8. Pour the beatened eggs in.SLow the fLame down.
9. Check ocassionaLLy via the sides of the mixture if the eggs are burnt to your preference.
10. Give the whoLe contents a huge fLip. (which may require a few fLips for beginners)
11. Serve and savour..;)

In China, I eat this wonderful dish at lunch and at dinner everyday! Cheap and good!!!

Quite similar with PRC version, but PRC used a pinch of sugar and eggs are not overly cooked, a bit runny like Narong described. Add with spring onions for final touch, yum yum

or step 3 & 4 can do like this.. slice tomatoes in 1/2 & scoop out all the seeds & wet squidgy bits inside & chop the fleshy parts of the tomatoes into chunks.

Tomatoes & egg dishes are quite common in farming communities in most countries, some don't even have a name for it, just google tomatoes & egg recipe.
