if you fast forward to colonization then you have typical 19th century staples. Salted Meat and Fish. Very simple Anglo-French stuff.

This French-Canadian cuisine, the emphasis is on French-Canadian. in the 1st scene at the ice fishing shack, the foie is very French and the Epoisses is made in France and shipped over. The only thing that is Canadian is the fish and the rabbit. In the 2nd scene at the ice hockey rink, the choucroute and the pork belly is Alsatian. Only at the very end at the cabane a sucre is it French-Canadian. Witness the Pakistani/Indian food. Imagine being deep in Frenchie icebound -30 celsius territory and they start serving naans. That's Canadian cuisine for you.
Btw, I've eaten at Martin Picard's joint twice already. It is good. Won't go again unless it's my last meal because it's so rich and artery clogging. But I swear to you if he wasn't a successful cook, he would be a serial killer.

to give you an idea of what I ate, it was a whole pig's head on a bed of gathered forest mushrooms in heavy cream. that 1 dish is heart attack heaven already.
