Hey guys, so you all know I had the Luwak coffee in Jakarta two days ago. I have to say that if given only one choice to choose between the Luwak coffee and my regular coffee I will choose my regular coffee because its so 古早味

Same same brand but mine is kosong.:smile:

Out of stock many months ago liaoz and i bought 10 big bags.

Now hiso a little, blue mountain and expresso.:p

I just bought the Xtra Cool fresh mint sweet that you mentioned before and tried out. The sweet is very small but very cooling..

Was at BigC earlier and saw the Plu Ma (Flower Crab) quite fresh. Picked 2 and here it is, Steam Flower Crab. Special thanks to joetys for the Tok Kong Chilli Sauce to go with steam crab. A little hot now, waiting for it to cool. :p

Actually how to see whether prawn or crab fresh? Heard before prawns with head abit red are more fresh, is it true?

Also how you clean the crab before cooking? Hehe haven't tried cooking crab.

Redness is not a good sign. Should be white and translucent as possible. When selecting prawns use the tongs to grip the body instead of the head. If the head is almost detaching ones, choose another one. The body should be as springy as possible and not stiff. But can be difficult to tell cos' the prawns are usually soaked in salted water and cover with ice. Have to learn from those aunties at the pasar. Observe how they choose.

For crab, a little depend on luck but generally, a fresh crab will not have any bad smell. You don't even need to put near your nose.

Think I oversteamed the crabs. A little dry inside and not as juicy as I wanted it to be. :(

I hope you buy live pu-ma because its no excuse not to buy pu-ma when living in Bangkok. In Singapore live flower crab is like gold so expensive but taste so nice. Ok if you have to buy dead ones check the legs and moving parts to make sure they are still tight, its good to go.

I usually buy live ones at Na Kluea (Near Pattaya North) but close liaoz so go for BigC. Actually BigC used to sell live ones and can steam live there but no more in the Pattaya south branch.

Yes, chilli is solid. I like it hot. Can be even hotter. Added a little white vinegar (peh chor) and lime (Sng Gam). Heavenly! Thanks Bro!

If you are cooking the normal crab (I mean not the flower crab) its best for your to remove gills first. Ok step one open this part your hands as shown and just pry off and throw away.

Secondly remove the top shell by prying open like this

Ok you are now good to go and do whatever you want to do to the crab.

Oh I forgot to add, for flower crab (pu-ma) if you are purly steaming it, just wash the exterior and steam it no need to remove gills but if you want to make chilli crab or fry it please follow the above steps.

Or I almost forget, how to kill a crab? Errrr this one is easy, just throw it into you freezer after buying it for 1hr, it will not grab you with the pincers after that.

BTW, was think the chilli sauce will goes very well with Hoi Luad (See Hum) but think I can get any at this hour beside the restuarants.

I'm afraid I did not actually say kill it. Really don't know if its dead or just went into suspended animation. Some people poke a chopstick into it to kill it I thought that its too violent so I simply cool it down then dismantle it.

Sawasdee krup everybody. Glad to be spending my Sunday in Bangkok. I've planned for me to be busy the whole day today. About to leave for Yaowarat (Chinatown) for marketing and breakfast, shop for some good fishes not available in the normal Thai wet market and also wanted to buy fish maw, mushrooms and other dry stuff for home in Singapore if I go back next weekend. Then will go visit my dog in hospital after that have lunch. After lunch will go shop for trees for my new place, young small trees and plant it there by the time I wanna start building it would have grown big, shout be getting 20-30 small trees. Then if got time go massage. Evening will go visit dog again and have dinner outside.

Actually when you mentioned suspended animation i laughed. That's cos in those comics like the x-men when they wanted to mention one of their characters was in cold storage they put he is suspended animation. Like he's well not frozen but he's somehow alive but just not "active" like put into some sort of "dream" or "sleep" state to be stored for a long period of time.

Don't laugh at me leh I learned this word when I was really young from a documentary about plants. Archeologists found like 3000-4000 years old seeds preserved in very dry condition in Pharaoh's tomb and it was still able to grow in the present day. They called it suspended animation. Actually what you described is exactly what I wanted it to mean about the crab as I believe 1hr in freezer does not kill it just made it go to sleep and non-active. So the final killing it when we start to open it up will be no as violent as like stabbing it while its trying to struggle out of being tied up.
