Cooking oil is use as grease to stir raw food so it don't get stuck in the pan or food stuck together when frying.

Brush oil on the skin to soften or make the fat tender and taste better... And look shinny for presentation...

In cooking we look at taste, flavour and texture... and presentation...

Cooking in high heat is to destroy bacteria and virus, worms, pesticides in the raw meat and veggies. Bacteria and virus are destroyed between 60°C to 80°C. Some need above 100°C to destroy them....

Just a quick stir fry the meat and veggies in high heat is enough cooking time.. don't have to burn the cooking oil which change composition of the resource into toxic component...

Quick stir fry retain the vitamins and minerals of the food which is what you want. Stir fry above 80°C longer than usual destroy the vitamins and minerals of the food and that's not you want...

cooking oil turns toxic when subjected to high temperatures, including atas olive oils.
Palm oil is best suited for high temperature. Hence its the most used in food processing. EU just banned it on grounds it destroys rain forest.

smoke point of avocado oil = 269 degree c.
smoke point of palm oil = 232 degree c.
of all the cooking oils, refined avocado oil has the highest smoke point.
