STIR-FRIED SLIPPER LOBSTER WITH SPICY BLACK BEAN SAUCE

IF YOU have no glass slipper to win the hand of your Cinderella, try a slipper lobster.

No need to pay top dollar for a night of fairy-tale romance.
Sometimes, less could lead tomore.
Though the poorer cousin of the much-loved lobster, a slipper lobster is still one hard shell to crack.
Find its soft middle by laying it on the table belly up and work it with a knife.
You'll be uncovering a sweet succulent surprise in no time.
Give it a heated quickie in the wok and shower it with a myriad of savoury sauces.
You'll be smacking your lips and enjoying an evening with minimum effort.
Just remember to leave the last tail for the lady if you are gunning for a smouldering hot evening, unless you have a deathwish of ending dinner in a bed of ashes.

STIR-FRIED SLIPPER LOBSTER WITH SPICY BLACK BEAN SAUCE
METHOD
Heat oil in wok.Stir-fry the peppercorns, garlic, blue ginger, ginger and onion.
Add fermented beans, sliced chilli and tomato. Stir-fry for a minute before adding the slipper lobster.
Add the tomato sauce, black bean sauce, oyster sauce, fish sauce, coriander powder and black pepper.
Add the water and allow it to come to a boil.
Cover the wok for about five minutes.
Uncover and stir in the egg, mixing it thoroughly.
Add in the butter. Once melted, add the spring onion.
Serve hot.

5 slipper lobsters
2 cloves of garlic, chopped
1 large onion, chopped
2 stalks of spring onion,
cut into 5cm-long pieces
2 chilli padi, sliced
1 red chilli, sliced
1 tomato, cut into wedges
1 slice of blue ginger
20g of ginger, sliced
1/2 tsp white peppercorns
1/2 tsp coriander powder
1/2 tsp black pepper
1 tbsp spicy black bean sauce
1 tbsp tomato sauce
1tbsp oyster sauce
1 tbsp fish sauce
1 tsp fermented black beans
1 tbsp Chinese rice wine
1 beaten egg
2 tbsp cooking oil
20g butter
60ml water
