SIZZLE or STING with these chillies

It's best to find a quick fix unless you wish to see the reptilian in your lover emerge.

All it takes to bring the sizzle and zing back into a shrivelled relationship could be some patience, heat and oil.

Don't underestimate your lover in the same way we may discount the power of desiccated chillies.

Dried chillies may appear wrinkly and unexciting, but their exterior belies a capacity to turn up the heat several notches in any dish.

A nice, slow bath of hot oil can release their wonderful fragrance and bring tears to anyone's eyes should you get close enough.

If this spicy dish does little to rekindle the spark of love, well, at least you made him cry, if not from gratitude, then the burning sting of the chillies.

STIR-FRIED CHICKEN WITH DRIED CHILLIES

Ingredients


300g boneless chicken, cubed

10 dried chillies, cut into thirds

1 shallot, quartered

2 cloves of garlic, sliced

5g ginger, sliced

1 slice of blue ginger

50g unsalted cashew nuts

4 tbsp cooking oil
Seasoning


2 tbsp oyster sauce

1 tbsp rice wine

2 tsp sesame oil

1/4 tsp five spice powder

Dash of white pepper

Pinch of salt
Method


Allow chicken to marinate in seasoning mix for about 15 minutes.


Heat oil in pan. Fry cashew nuts until golden brown. Remove cashew nuts from pan, leaving the oil behind.


Now fry the dried chillies until the colour darkens.


Add garlic, shallot, ginger, blue ginger and stir-fry. Just as garlic begins to brown, add chicken into the pan. Once the chicken cubes turn opaque, toss in the cashew nuts.


Serve with white rice.
 
This is a delicious dish.... of course the chili is not to be eaten unless you want some fire in your mouth
