Three options:

1) Reduce quality
2) Reduce quantity
3) Rebrand and make it atas, with a little help from 'food bloggers' and 'influencers', you can sell peasant food at a premium.

This is happening to all cuisines.

For mall outlets, you're just paying for the rent. And you know who owns most of those malls. :cool:

Singaporeans are a weird lot. Some years ago when I was working in an office with a food court downstairs and some coffeeshops just a 5 minutes walk away, a lot of my PME colleagues (especially ladies) will insist that they don't want to walk and thus buy from the food court.

Everyday they would buy from the food court despite easy alternatives nearby but they never stop complaining how expensive and not value for money it is. Some even worse - complain about paying $6.00 for lunch at food court and then turn around splurge another $6.00 buying fancy bubble tea/fruit shakes/kombuchas etc after lunch... :rolleyes:
