Spize’s River Valley outlet to be shuttered; severe food hygiene lapses found

20181207_spize.jpg
Spize’s River Valley outlet will have its licence terminated immediately, after a joint investigation by the NEA, AVA and MOH found several hygiene lapses, including unlicensed food handlers, and poor personal hygiene from food handlers.

Published 07 December, 2018

SINGAPORE — Popular eatery Spize will have to shut down its River Valley outlet after its licence was terminated, following investigations which revealed an “unusually severe” outbreak of gastroenteritis from “heavily contaminated” food.

The National Environment Agency (NEA), Ministry of Health (MOH) and Agri-Food and Veterinary Authority of Singapore (AVA) said in a joint statement on Friday (Dec 7) that there was “strong evidence” of severe contamination from poor hygiene and food handling practices.

Mass food poisoning case in Singapore claims second victim

SINGAPORE: The mass food poisoning outbreak involving an Indian rojak stall at the Geylang Serai temporary market has claimed its second victim.

Norani Kassim, 59, who was warded in Alexandra Hospital, died shortly before 10am on Wednesday. The hospital said she was warded with food poisoning on Saturday.

To date, the outbreak has killed another woman, 57-year-old canteen assistant Aminah Samijo and caused a 38-year-old expectant mother, Rosiah Samat, to miscarry.

Another 137 people have also fallen ill. The Health Ministry said 37 people were hospitalised and 100 others received outpatient treatment when they experienced abdominal cramps, vomiting and diarrhoea after eating at the stall.

'I would never eat street food after reading this report': Scientists appalled as tests on Delhi food stalls find high levels of faecal matter in golgappa and momo

By Neetu Chandra Sharma

If you are unable to fight the urge to dig into spicy water-filled crispy golgappas or steaming momos, here’s a very strong - and shocking - reason to say no.

A new study has found high faecal contamination in such fast food and junk food items, especially in several west and central Delhi localities.

Underlining that street food and hygiene have always been strange bedfellows, the study by Institute of Hotel Management, Catering and Nutrition, Pusa, shows extremely high volumes of E. coli bacteria, which can cause severe infections, in these snacks.

Taking note of the report, the Food Safety and Standards Authority of India (FSSAI) has written to Delhi’s food safety commissioner to check the quality of street food items.

“We conducted the study to analyse the microbial load in Delhi’s street food. It was done with a survey of commonly consumed street food by 100 individuals,” said Dr Arpita Sharma of the Institute of Hotel Management, Catering and Nutrition.

“We chose five locations in West Delhi, where daily sales were the maximum, for collecting samples. For microbial analysis, five street and five franchisee food products were taken from the most popular shops. We collected food samples (samosa, golgappa, burger and momos) twice from the street shops and franchisee outlets at a one-month interval,” she said, adding that the samples were drawn from west and central Delhi.

To the surprise of scientists, even samples from posh areas like Connaught Place were found to be infected with bacteria.

Other famous markets where samples were tested include Rajouri Garden main market, Rajendra Place, and Subash Nagar. The normal Most Probable Number (MPN) of coliform bacteria is 50 or less as per the Central Pollution Control Board, but it was found to be over 2,400 in the samples of branded burger, vegetarian and non-vegeterian momos and other food items.

The bacterial pathogens commonly found in street eateries are Bacillus cereus (causes vomiting and diarrhoea), Clostridium perfringens (abdominal cramps and diarrhoea), Staphylococcus aureus (vomiting, appetite loss, abdominal cramps and mild fever), and Salmonella species (typhoid, food poisoning, irritation and inflammation in the gastrointestinal tract).

“This is a matter of great concern. I would never eat street food after reading this report,” said Dr Shobha Broor, microbiologist at the All India Institute of Medical Sciences (AIIMS).

“The report literally means that whatever we eat, we are ingesting faeces.”

Curry house chef prepared food after wiping his bottom with his bare hands because he doesn't use toilet paper for 'cultural reasons'

  • Mahbub Chowdhury, 46, from Swindon, ran the Yeahya Flavour of Asia
  • Inspectors found bottle in kitchen that was covered in 'faecal matter'
  • Chef filled it with water from kitchen taps before using it to clean backside

Mahbub Chowdhury, 46, from Swindon, wiped his bottom using his hands before preparing food at Yeahya Flavour of Asia

A takeaway chef wiped his bottom using his hands before preparing food because he does not use toilet paper for 'cultural reasons', a court heard.

Mahbub Chowdhury, 46, from Swindon, was found to have a filthy bottle in the kitchen of Yeahya Flavour of Asia, which inspectors concluded was covered in faecal matter.

When questioned, he said he filled the empty milk bottle with water from the kitchen taps before using it to clean his backside after going to the toilet.

Chowdhury prepared meat and fish curries at the takeaway, which was run out of a rented kitchen at the Nine Elms pub.

The chef, who no longer works at the takeaway, pleaded guilty to ten counts of breaching food hygiene regulations at Swindon Magistrates Court.

He was fined more than £5,000 last year for ten similar offences relating to food hygiene.

Rosie Heath, prosecuting, said environmental health officers who visited the business in May last year found 'very poor standards of hygiene'.

She said: 'In the kitchen under the double sinks [they] found an empty plastic milk bottle which was extremely dirty and was covered with brown fingerprints.

'When asked, Mr Chowdhury explained he filled the bottle with water from the kitchen taps and used it to clean his bottom after visiting the toilet.

'He did not use toilet paper for cultural reasons. Inspectors concluded the brown finger prints was faecal matter.'

Mark Glendenning, defending, said the milk bottle was never examined and the marks could have been spices.

Chowdhury will be sentenced at Swindon Crown Court.

NO LOO ROLL: HOW MUSLIMS, HINDUS AND OTHERS USE WATER WHEN THEY GO TO THE TOILET

A jug, called a lota, is filled with water to wash after going to the toilet

Muslims, Hindus and others in India and other South Asian countries, as well as in the Middle East, use water to clean themselves after going to the toilet.

A jug, called a lota, is filled with water, or a hose or bidet shower is used. Traditionally, the left hand is used to wash after going to the toilet, while the right hand is used to eat.

In Islam, there are a set of practices laid out regarding toilet etiquette.

Although they are not compulsory, many devout Muslims follow the teachings.

The Qadaa' al-Haajah code states that one should clean their private parts using water and their left hand, or three stones.

In Hindu scripture, there are also detailed instructions about purifying rituals that should follow urination and defecation.

SINGAPORE: Mass food poisoning at a Spize outlet last month left more than 80 people ill and caused dozens to be hospitalised.
One of those hospitalised, Mr Fadli Saleh, died on Nov 14.

Investigation results on the food poisoning incidents released on Friday (Dec 7) by the Ministry of Health (MOH), the National Environment Agency (NEA) and the Agri-Food and Veterinary Authority (AVA) revealed several lapses in hygiene at the Spize River Valley premises.
Food that was marked for discarding was, in one case, sent to an outlet for use, and ready-to-eat food was left uncovered and unlabelled.

Of the 82 hospitalised, 36 people were tested positive for salmonella, authorities said.
Six different types of pathogens were detected from food samples, food handlers and the restaurant, with three types found in belacan egg fried rice alone.
Here's what they are and where they were found.
SALMONELLA TYPHIMURIUM AND SALMONELLA ALBANY

image: data:image/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==

What is it?
Salmonella infection, caused by salmonella bacteria, is caused by contaminated water or food, or the ingestion of raw or undercooked meat, poultry, or eggs. In this case, it was the main cause of illness among those who ingested food from Spize River Valley.
Where was it found?
Salmonella typhimurium was found in belacan egg fried rice, raw chicken samples, kang kong, a door handle leading to a cold room and on a cold room rack. Salmonella albany was detected in sambal belacan.
Symptoms
Nausea, vomiting, stomach cramps, diarrhoea, fever, headaches and blood in stool.

FAECAL COLIFORMS
What is it?
Faecal coliforms are bacteria found in faeces.
Where was it found?
Faecal coliforms were found in belacan egg fried rice, a chopping board and knife used for ready-to-eat food.
Symptoms
Ingestion of such bacteria may not be immediately harmful, but their presence indicates a high risk of other harmful pathogens.

Bacillus cereus as seen through an electron microscope. (Photo: Wikimedia Commons/Mogana Das Murtey/Patchamuthu Ramasamy)

What is it?
Consumption of Bacillus cereus and the toxins it produces results in an illness nicknamed "fried rice syndrome" due to the first recognised outbreaks being linked to fried rice.
The heat from cooking stimulates the bacteria to reproduce, and leaving the food at room temperatures allows the bacteria to incubate. Reheating the food briefly does not kill Bacillus cereus nor does it neutralise the toxins it produces.
Where was it found?
Bacillus cereus was found in belacan egg fried rice and uncooked rice.
Symptoms
Diarrhoea, stomach cramps, nausea and vomiting.

NOROVIRUS

image: data:image/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==
Norovirus particles in faeces. (Photo: Wikimedia Commons/Graham Beards)

What is it?
Norovirus is known to be highly contagious and spreads through contaminated food and surfaces, especially in close quarters such as cruise ships.
Where was it found?
One food handler tested positive for norovirus.
Symptoms
Diarrhoea, stomach cramps, nausea and vomiting.
CAMPYLOBACTER JEJUNI

image: data:image/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==

What is it? Campylobacter jejuni can be found in raw and under-cooked poultry, unpasteurised milk, and contaminated water. It is also commonly found in animal faeces.
Where was it found?
One food handler tested positive for Campylobacter jejuni.
Symptoms
Diarrhoea, stomach cramps, nausea, fever and vomiting.
