Jilin and Liaoning are so easy... just go to any of the generic Dongbei Tiong cuisine restaurants.

Dongbei = Jilin, Liaoning, Heilongjiang.

Ningxia is probably very similar to Gansu, Muslim stuff.

Tibet has a cuisine? Probably very similar to the Mongolian nomadic stuff.
