Recently, I went to two places where I knew to have lei cha fan and found to my dismay that they were not that anymore. The 2 places are Amoy food centre and a coffeeshop in Geylang.
Asked friends and colleagues but they could not help with either the new locations or any other places with lei cha fan. :(

Bros, any suggestions or advice on where to get reasonably priced lei cha fan (thunder tea rice) in SG?

Go to Lau Pa Sat, there's a stall there that attracts long queues during lunch time.
I know of another stall at a Jurong East coffeeshop next to Parc Oasis Condo.

Too late! The good shop that I knew, already CLOSED SHOP! Along Balestier Rd. Opposite old Hoover Cinema. It was a shop selling almost nothing else but 擂茶。Not cheap. I went years ago with ex-GF and she complained about the prices.

Go to the far end of this BLK 345 (Jurong East Ave 1) coffeeshop. There is one stall (@ corner) & a pair old aunties sells 擂茶。 Not the best but good lah. There are different versions. Hakkas have different localized clans. 3 types of 擂茶。 河婆客 is one of them. Forgot the names of the other 2 at this time I am posting. If I can recall then I will post again. :confused:;):rolleyes:

Yishun 忠邦 market also have a stall in hawker center. Good but not the best.

Best hor... not in SG. :cool: I took in Tapei. When I went there as part of the International Delegates to observe their elections, the political parties reps from all over Asia went together to a specialty restaurant that furnished with Hakka tradition and actually they will bring the instruments etc to your table (oldish traditional tables and seats) and they teach you their culture as they brought the food to table. You can DIY to 擂 your own add your own ingredients yourself. Or the Hakka Moi 客家妹 will 擂 for you at the table slowly, you can ask questions (I am not sure if you can ask her Tel # :eek: it depends I think;)). They show you pictures and introduction write-up at the table. Their recipe very authentic.

Thunder is a WRONG WORD for it. 擂 is pounding. Not the same as 雷。

It refers to how the Hakka people pound the ingrediants in this bowl to prepare this food.

There is one along Joo Chiat Rd. If you come from East Coast Rd and go towards Changi rd, the shop is on yr left, shortly before Hotel 81 and after the CC. There is a small car park in front. The name is called Thunder Tea Rice.

If I recall well, this one is a bit tricky. They close at 3 pm. Kind of sync with the wet market.


That is the same as the one I posted the Google Map above. Yes usually only sold in morning and early afternoon. Not at diner time. Good thing about it is they are made fresh on the spot. Old ladies made them on the spot as you wait.

梅州 擂茶 is the other type that I can now recall. There is still yet another type (at least). I remember eating at least 3 different types in PRC. 梅州; 河婆 and one other - name I can no recall yet. ;)


I got it now lah. :D the last form of 擂茶 I had tasted was 海丰擂茶. So I tasted this 3 forms:


  1. 河婆擂茶
  2. 海丰擂茶
  3. 梅州擂茶

There are actually few other forms but I had not tasted - so in Hakka:

<wbr> [揭西擂茶有较为悠久的历史渊源,陆羽《茶经》卷三“闻南方有一困蜀妪作茶粥卖”,结合河婆(揭西县城)地名的传说,此蜀妪可能就是指何婆。陆羽是唐朝 人,距今已有一千多年历史,他所说的茶粥就是把茶叶碾碎成细米,加上米粉、油盐,制成茶团或茶饼,饮用时捣碎,放些葱、姜、椒、桂等调料,用水蒸煮,煮成 一大锅茶粥供大家食用,这就是最初的擂茶。

<wbr> 揭西擂茶有其美妙的传说。北宋时,潘仁美奉宋太宗之命南下征服南汉王朝,派一小分队途经揭西进攻广州。到了河婆因为士兵大都是北方人,加之天气炎热、水士 不服,士兵们纷纷上吐下泻,病势严重,将领们心急火燎,却又束手无策,何婆闻讯赶来,传授了一个秘方,用“三生汤”一喝擂茶治病。根据需要,她吩咐一些人 去摘茶叶,一些人去挖生姜,有些人去碾米,有些人去找擂钵和棒子。等把这些东西办齐以后,很快就制成了大量的擂茶。因用擂钵,而称“擂茶”。何婆说给那些 病倒了的士兵每人喝一大碗滚烫烫的擂茶,然后蒙头盖脑睡上一觉。次日醒来,人人浑身大汗,个个大打喷嚏。说也奇怪,病人们都痊愈了。后来,征南人马有一部 分留下来屯田,于是擂茶不但在揭西县,而且在粤北、湘西、赣南等客家人聚居的地方流传下来,成为客家饮食民俗的一大特色。

<wbr> 揭西县客家人聚居的河婆等地,喜欢饮用擂茶。凡家里来了客人,主妇必定擂一钵茶给他喝,或配以爆米花给他吃;凡邻居、朋友、亲房的姑娘出嫁之前,接受了一 包喜糖之后,必定要擂一钵香擂茶请姑娘喝,以示祝贺;凡家里人病愈也要煮“擂茶”,请来那些曾经关心其健康,对其有帮助的邻居、朋友共同品赏,以作酬谢, 并图个吉利。

<wbr> 正月十五无霄节,家家户户都煮“十五样菜擂茶”。这种菜茶,青年妇女、小姑娘最有兴趣,她们早早就到菜园里去采来十五样青菜,其中必定要有葱(据说吃了日 后会“聪明”)、蒜(据说吃了会“计算”)、荞(据说吃了就会有“窍门”)到了晚上,她们游巷、串门玩了几个时辰后,就煮擂茶来共同分享预示新年大吉。夏 秋季节,农家都以擂茶为午餐。气候炎热的时候,人们劳动过后,常常不思饮食,桌上有一钵擂茶,那就十分诱人了。他们饮着喷香的擂茶,期间配吃烙熟的番薯、 芋头片,咽喉顺畅、回肠荡气,既饱了肚子,又除了烦渴暑气,焕发了精神,干劲更大。 <wbr>

<wbr> 擂茶的主要工具是木棍和带有螺纹的陶钵。木棍多为山油茶树或当泥树(山捻子树)或质韧可当药用的冬瓜瓤树。擂茶的配料十分丰富。制作并不复杂,先把花生、 油麻、茶叶、园香、金不换或苦棘芯放进陶钵内,用木棍擂成粉末,泡上开水;然后把在锅里炒好了的萝卜干、芥蓝菜、蒜、青葱、黄豆、白菜、荞头、虾米等菜料 放进钵里去搅匀并放些咸酥花生仁即可作饮料饮。如要吃饱,即加配白米饭或爆米花,也有米骨(谷子直接加水蒸熟再脱壳晒干而成),吃起来,咸、香、苦、竦、 甜、甘、酸各味俱有,不但可口开胃而且别有风味。

今天周末,妹妹过来玩,看见房间里还放着已尘封一年多的擂茶钵,缠着我要做擂茶吃,想到喷香的擂茶,不由使得我直咽口水,舌舔嘴唇,立马动手,待到材料买 来,又翻箱倒柜找出一包茶叶,茶叶是老家带来的,土生土长没有农药,没经机器的天然食品!许多人都只知道茶叶是用来泡茶,不知道茶叶也是能吃的,这不,擂 茶,就是要地道地吃这些茶叶了,呵呵。生活繁忙,泡茶需要悠然自得的淡定,才能品出味来,样子很优雅,还带些贵族,擂茶吃的是大众,一种辛勤劳动后的喜 悦,泡茶喝出情感,擂茶那就是吃出感情了,今天只有兄妹两人,城市的防盗门隔绝里邻里关系,自然不能像乡下那样邀上左邻右舍,三姑六婆一起吃擂茶谈天地, 其乐融融的了。

<wbr> 不过擂茶还是要吃的,找来茶叶,扔些进钵里,操起擂茶棍就擂了起来,这擂茶还真不是一件简单的事,你看这些姑娘们,一手搭在长长擂茶棍子的上端,一手扶着 棍子的中下端,用力作螺旋状运用力作螺旋状运动,把钵里的茶叶香菜,花生芝麻擂成末状,腰肢随着频率摆动,婀娜多姿,未吃擂茶,光欣赏这过程就是一幅动人 的风景。我想乡下的大妈们和我一样是不会如同这些姑娘们的作秀状的,我们讲究的是效率,所以运棍如飞。来回运动,一会儿茶叶就擂好了,又连忙把花生扔进钵 里去擂起来,花生米不是茶叶,这是圆碌碌的东西,随着擂茶棍滚动,让你追赶不已,无奈之下我就直接用棍子去敲,谁知“哗啦”一声响,擂茶钵居然烂了,裂成 几截,看起来就像一张脸,得意地朝我挤眉弄眼。

<wbr> 妹妹看得目瞪口呆,我只好嘿嘿地干笑几声,“没口福啊,这茶钵是个水货”。这情景就像树上有一只很诱人的苹果熟了,因为太高,踮起脚都够不着,只好搬来木 梯,就在我伸手欲摘的那一瞬,苹果突然脱枝而落,摔在地上,“啪---”成了一团果泥。这便是生活中所谓的无奈---眼看到手,却又失去,但不算白费力, 至少,我知道这个苹果不属于我,如果这时从木梯下来,再去摘树上其它的苹果也不晚。苹果能摘别的,但着茶钵可没有了,这是土特产,只源于老家,外头可买不 到,砸了饭碗,便没得吃了!

<wbr> 我不由想起家中的那个大茶钵,沉甸,厚重,简直就像石头打造而成,长长的擂茶棍捣碎了无数的茶叶,花生芝麻,使它渐渐变短,使钵里的陶纹渐渐磨去,变得光 滑,使用了N年却坚固依旧,到了现在这些年头,这茶钵也越做越精致,越做越轻便,越做越迷你,还上色添花,越做越五花八门,我想是我用力过头了,但这东西 很脆弱倒也是事实,大概是泥匠瓦工们变得功利,也大概是顺应潮流,总之,今天的擂茶是泡汤了!

<wbr> 两个人擂茶,就像一个人做饭吃饭,做得再好吃也是徒劳,因为没有分享,没有分享的喜悦,也就没有成功的滋味!擂茶是待客之道,是老家农村高规格的礼遇,也 是盛情的标志,也是邻里和谐,增进感情最好的表达方式。它是方便的,就地取材,取之于郊野菜园,村头巷角(金不换,必迟),不必直奔商场,无须杀鸡宰鸭, 也不必什么一级大厨,人人可以动手,人人也能够动手,分享劳动的快乐,阿婶大妈,叔婆哥嫂们聚在一起,你炒菜来她擂茶,你烧水来我洗碗,大家一起七手八 脚,一会儿一钵香喷喷的擂茶便做好了,你一碗我一碗,不必随号入座,也无须礼让三分,这时主人就会忙着给各位添茶加菜,大家有说有笑,开开心心就是一顿擂 茶大餐;擂茶是随意的,它没有正餐隆重,不必在乎时间,能当点心也能做正餐,擂茶又是大众,无论男女老少,无论你身居高位还是一介凡民,都是相同的做法, 都是一样的配料,都是一样的无拘无束,我想吃擂茶是最适合交际,最能拉近人们距离的就餐方式,人们在擂茶面前没有距离,只有平等和欢乐!

擂茶

  源远流长的"擂茶"习俗,按文献记载,始创于南宋时期。而在民间传说中,则为东汉初年,伏波将军马援南征武陵壶头山的"五溪蛮"时,路经乌头村(今湖 南桃源县桃花源村)时,因军中发生疾疫,遂制擂茶以避瘴。又说是在三国时,诸葛亮命张飞率军至湘中取武陵郡(今常德地区),行至乌头村时,因有大批军士中 暑,至酿成大疫,由当地一老妪献出祖传"三生饮"(即擂茶)治之,竟一服便愈。擂茶是用"生米、生姜、生茶叶"擂制而成,故又名"三生饮"、"三生汤", 俗称"擂茶脚子"。饮之可消暑散寒、清肝明目、润肺健胃、祛温释烦避邪。擂茶的制饮,在中华大地可谓名闻遐迩。以至在我国的湖南桃江、桃源,福建将乐县, 广东揭西县一带都有擂茶的制饮,成为当地的特产,但各地的制配略有所不同。

  (1)桃源擂茶

  喝擂茶是湖南桃源的特殊习俗。一年四季,无论寒冬、酷暑、暖春或凉秋,都要饮擂茶。制作擂茶,用生米、生姜、生茶叶,为提高香气也可加入芝麻、花生仁 等。将"三生"置于上宽下窄、内径约一尺半,壁内有沟状竖纹的陶瓷擂钵中,然后用几尺长的山楂木或上等油茶木制作的"擂棍"旋捣,并加入少许冷开水,使成 糊状,冲以沸水即成。擂茶制成后稠粘如糊,色呈淡咖啡色,香气扑鼻,入口滑溜柔润、甜爽。现代饮擂茶时,还要另摆上一桌丰盛的小吃佐饮,像包米谷、炸黄 豆、炒花生、油炸豆、锅粑、酱萝卜等。

  (2)桃江擂茶

  湖南桃江擂茶的制法大致和桃源相同,只是在吃口上各有不同。桃江擂茶一般放糖,成为"甜饮"。而桃源擂茶则放盐,大多为"咸食"。桃江的妇女怀孕后,有特别要喝擂茶的习俗,谓喝擂茶越多,养出的婴儿越白胖。
  (3)将乐擂茶
  请吃擂茶也是闽西北将乐县招待宾客最普遍、最隆重的礼节。将乐制作擂茶的主要工具,也是陶土烧制的"擂钵"。内径约一尺左右,内有沟状竖纹。用油茶木 制成的擂茶棒,长约二尺许,还有供过滤渣滓的竹编笊篱。制擂茶的用料为:白芝麻、芳香型绿茶、花生仁、橘皮、甘草等(盛夏时要加入金银花,寒冬时加入陈 皮)。制作时,先将芝麻、茶叶、花生仁等置擂钵内,用擂棒均匀压磨,至成浆状后用沸水冲泡,再用笊篱滤去渣滓,制出的擂茶色雪白,味芳香,清醇爽口,生津 止咳。将乐人逢婚嫁寿诞、新居乔迁、亲朋欢聚,甚而邻
  里串门、至现代的高考人榜、应征入伍等一应社会活动,都要以擂茶待客。饮茶之余也以糖果、饼干、瓜子等佐茶。
  (4)揭西河婆传统擂茶
  广东潮汕除著名的"功夫茶"外,还有制饮擂茶的习俗。揭西擂茶的主料是品质好的红绿茶或苦丁茶。所用佐料与桃源、将乐有所不同,且名目繁多,除有炒花 生仁、炒黄豆(或绿豆、赤豆)、炒芝麻外,还有薄荷、金不换、苦刺芯、黄荆嫩叶芯、芫荽等当地土产,再加入葱、姜、蒜等调料。制作时,将主、佐料放入特制 的瓷擂缸中,用山苍子树制成擂棒,用力在缸内擂捣,将茶叶和佐料擂成浆糊状,加入少许食盐,用沸水冲泡即可,入口香气浓郁。

<wbr> (5)海丰擂咸茶 
<wbr> 海丰县在茶的吃法上,有清茶、咸茶、油麻茶、苦刺心茶,以至茶饭,菜茶等等,吃法迥异,制法也不同,各有特色。而最为有名的,便是“擂咸茶”。“擂咸 茶”,就是将日常泡茶用的茶叶抓一把放进一个特别的陶钵中,另上一些盐,以木棒不断捣匀捣碎,直到变成粉末状,倒入事先炒熟的芝麻,再冲入煮沸的开水,就 成了一杯喷香的咸茶。这时,把茶用碗盛进来,撒上炒熟去膜的花生仁和炒米,就是芳香四溢,令人垂涎的“擂咸茶”了。

<wbr> 海丰人待客热情,一般的左邻右舍、亲朋好友来串门,使敬上一杯清茶,偶尔也擂一擂咸茶;要是有亲人出远门数载方归,多半要擂咸茶遍请乡邻。倘若是久末谋面 的稀客或有地位的尊长来,那就非擂咸不可了,越是尊贵的客人,茶叶的质量愈是讲究,芝麻,炒米。花生越撒得多,。吃三碗四碗是不能说多的。有人一次可以吃 十多二十碗。

<wbr> 吃擂咸茶必是一人备好两只碗,一只端着吃,另一只盛着咸茶备添。各人吃各人的碗,决不会混淆。如此分明,以示对人的尊重。

<wbr> 有海丰,擂咸茶除用来待客外,还被用作消遣和解乏,这在女人中尤甚,女人们干活累了,或受了婆(媳)丈夫的气,或闲得无聊,便聚拢在一起擂咸茶。

<wbr> (6)惠东咸茶

<wbr> 惠东县客家地区喜欢用咸茶招待客人,凡吃过咸茶的人会沉得亲切,初尝咸茶的人则会为其独特的风味赞叹不止。这种咸茶,既可当茶,又可代饭,它的来历已无从查考,而它的制作则颇费工夫。

<wbr> 先说用料,咸茶的主要原料是爆米(用饭干炒制而成或用生米在爆米机中爆成),配料则有红豆、黄豆、乌豆、花生、油麻、茶叶米、香芋等。豆类可多可少,也可用其它豆类代替。如:蚕豆、豌豆等。而花生、油麻、香菜必不可少。

<wbr> 再说煮茶,先将爆米及豆类煮熟,然后放入花生粉、油麻、香菜,也可放入少许胡椒粉、茶叶碎,将味道调好,这样,咸茶便制成了,除此之外,还有另一种制法,称为泡茶,即将爆米、花生粉、汕麻和香菜同时放入碗里,用开水冲泡。稍顷,出味后便可食用。

<wbr> 惠东客家人除招待人外,遇到吉庆嘉事,也用咸茶,按照习俗。认家媳妇生了孩子,第三早上,主人家便要煮一桶咸茶,宴请亲戚,朋友和邻居,这称为“三朝 茶”;孩子到了满月时,又煮“满月茶”;还有建新屋上梁,要煮“上梁茶”;住进新屋,要煮“居茶”;男女婚事议定后,姑娘的母亲第一次到男方家里,男方要 请“亲家茶”等等。

<wbr> (7)河婆客家药茶
<wbr> 药茶是客家地区农村群众常用的一种传统保健饮料。客家地区地处山区,可以用制药茶的原料很多,抒那些有药用价值的田人园蔬菜,树叶,表草采集起来 洗净晒干,随时泡用。

<wbr> <wbr> <wbr> 药茶品种繁多,药用功效各异,在农村家庭较普通饮用的药茶有:消暑去痧的“布惊仁茶”、去积止泄的“萝卜苗茶”,清热开胃的“拔子叶茶”、清炎止痢的“葫芦茶”等等。其中又以紫金县特产“竹壳茶”为最著名,具有清热、去积、消炎、降血脂、减肥等多种功效,远销海内外。 <wbr> <wbr>
