Drinks stalls in coffee shops and hawker centres are highly profitable because they enjoy massive profit margins, benefit from captive audiences with repeat daily visits and require minimal preparation, skill and labour. In S'pore, these stalls are frequently operated directly by the coffee shop owner to maximise revenue.
