Some time back, this photo caught my attention. It was posted by a celebrity chef on Instagram, relating to a TV show about Hawkers.

Here’s a quiz for you.

There are so many plates piled up high. Doesn’t it seem that they’re on their way to wearing Rolexes and driving Mercedes?

Well, I beg to differ. Let me give a quick explanation…

From the picture, there seem to be around 200 plates.

Selling 200 plates at $3/plate will give $600 in revenue.

Cost of ingredients should be around $1.50 which gives us a tidy profit of $300.

But wait… That’s not all.

Assuming only 4 off days per month, and also assuming a combination of cheap rental and low utilities of $120 per day (I deliberately based my calculations real low for uncertainty. Just to let you know, there are many hawkers that easily surpass this hypothetical figure…)

TA-DAH! We are left with $180 of cold, hard cash.

It’s going to be crazy cooking and serving 200 hungry customers all alone, so two hawkers will probably end up with $90 each.

The hawker should switch to selling pasta or ramen. At hawker centres, people are willing to pay at least $6 for average tasting pasta or ramen. The cost of ingredients is still about $1.50 per serving. Based on the same calculations, the hawker would double his income immediately just by disassociating himself with sinkie cuisine.

Can make money selling chicken rice at $2 or anything for $2...learn some tricks from the cooks, slice the meat thinly, flatten it with the cleaver, lay them, straight & flat ( the meat, what are you thinking?)...it look like a lot of meat to the eye, the others do the same; it is the arrangement of the food. You can make money selling at $2...no need to raise prices yet. As you attract more gullible customers, offer Upsize add 50 cents & then offer Premium dish for $3... but still sell the $2 variety.

I know of a hawker selling noodles at Yio Chu Kang Hawker center his earning exceeded $100k per year but his income tax only show $50k he would buy a $10K plus Rolex every 6 months and driving a brand new Mercedes?? Rentals are cheap. The hawkers who are getting killed by rent are those selling cheap food with low profit margins. Ashton's has done remarkably well by selling restaurant food in coffeeshops offering rentals at hawker price. Their margins are much higher than loserfood like wanton mee. I believe Ashton's has 3 to 4 times the profit margin for each unit of food sold as compared to those selling pigswill chap chye png or wanton noodles.

I said before that any decent hawker with half a brain should switch to selling pasta or ramen where the profit margins are easily double that selling sinkie type of noodles like bak chor mee or wanton mee. Sinkie cuisine, regardless how good or famous, has difficulty selling at more than $4 per plate or bowl, while average pasta can easily sell for $6 to $10 easily.

Hawkers do not set up business to feed the poor. If you want food for poor people, go to a soup kitchen.

Many hawkers today are poor because their food earns little margins on low sales volume. Those who succeed usually depend on a formula of low margins high volume, which lead to very long working hours and exploitative conditions for themselves and their helpers.

I would pay restaurant price for good char kway teow and chicken rice, and I have. If people don't mind paying $20 for jap ramen and pasta, why can't they pay $20 for topnotch bak chor mee and hokkien mee?

It's not your birthright to demand for cheap food at the expense of others. Good hawkers aspire to earn more and improve their lot. They shouldn't be condemned to a life of poor working conditions earning low margins just to feed cheapskates.
