IF YOUR girlfriend does not hunger for you, at least make her salivate over your culinary prowess. That might keep her coming back for more.

Seafood tofu crabcakes are a safe bet. Strike a compromise between healthy vegan tofu for the lady and solid seafood bits deep-fried to give it that masculine sizzle.

When you really think about it, men have an astounding similarity to seafood tofu crabcakes. All golden crispy on the outside, but prise them open with a fork, and you get a delectable array of delightful unidentifiable seafood softness.

Ladies, simply enjoy the meal and do not go into FBI mode. When a man cooks, trust me, you don't really want to know what he has been doing. Especially if he is adverse to Lady Macbeth's compulsive handwashing and hand sanitisers. As long as you don't barf during your goodnight kiss, ignorance is bliss.

This also applies when touring his apartment. Content yourself with admiring the exterior furnishings. Do not snoop and or try to find out what lies beneath. What he has stowed away should be left well alone.

If you are the one doing the deep-frying, the trick is to know how much heat is needed. Too short a time, and you get mushy insides. Slow and easy is the way to go. No need to rush headlong into things. With crabcakes and men, you simply have to take your time.

But I advise all nosy-parkers who cannot respect private spaces to keep the oil you used for deep-frying on the heat. It may come in useful should you find certain feminine articles of clothing not likely to belong to his mother under your guy's bed.

SEAFOOD TOFU CAKES

1. Put shrimp, crab meat and squid into a pot of boiling water for 2 minutes. Drain water, allow the seafood to cool, then chop coarsely.

2. Remove tofu from packaging and place on kitchen paper to drain off excess water.

3. In a large bowl, mash the tofu. Add the chopped seafood, garlic and onion. Throw in seasoning, egg, 120g breadcrumbs, corn flour and cheese. If the mixture is too mushy to form into patties, add more breadcrumbs.

4. Form patties of about 6cm in diameter, no more than 2cm thick and coat them with more breadcrumbs.

5. Heat oil that's about 5cm deep in pan.

6. Deep-fry one or two patties at a time for 2 to 3minutes each until they turn golden-brown. Drain excess oil on kitchen paper.

7. Serve with mayonnaise or tartar sauce onside.

INGREDIENTS

100g shrimp, shelled and deveined

100g crab meat

60g squid

250g tofu

2 cloves garlic, minced

2 shallots, chopped

50g grated cheese

200g breadcrumbs

2 tsp corn flour

1 egg, beaten

Oil for deep frying

SEASONING

1 tsp parsley

1 tsp basil

1 tsp mint

1/4 tsp cayenne pepper

Dash of black pepper

1/4 tsp salt
 
Top
