    Sate started in Indonesia, then spread to the rest of the region. I still prefer Malay satay cooked over a charcoal fire - the marinade, the peanut sauce, the ketupat... the Chinese or Baba versions don't come close.

    Best satay is in Kajang, hands down. No other satay - Indon, Thai, Sg - comes close. The marinade is the key: lemongrass, shallots, turmeric, galangal, coriander, garlic, salt, sugar. And must be grilled over charcoal fire.

    Pahang (Raub & Bentong) grows the best MSK because they're grown at altitude (800-1,200 ft above sea level). More fertile soil, better drainage, cooler temp. Johor plantations (mainly in Segamat) are all lowland plantations - even the best strains will turn out mediocre.
